What is Ruff-Fenton degradation?

The Ruff-Fenton degradation is a process that involves the oxidation of aldonic acids (in the form of calcium salts) using a combination of hydrogen peroxide, H2O2, and ferric salts. This results in the shortening of the carbon chain of sugars.
